Put these bamboo shoots in salty warm water and clean properly, otherwise it will taste astringnet. Then squeeze bamboo shoots. Then make a paste of arua rice, cumin seeds, chili powder, coriander powder and black pepper powder. Don't make this paste too watery, make a thick paste. Then add turmeric powder, salt as per taste and chopped bamboo shoots on that paste. Mix them well. Leave this for 30 minutes. Then put a tawa on stove, when it's starts heating, put some oil on that tawa. Then put that mixed bamboo shoot batter on that tawa in a circular size as pancakes. Fry this properly by flipping both sides on low flame until both the sides will turns into brown color. Then transfer this pancakes in to a plate and garnish with cucumbers and carrots. Then serve this Bamboo shoot Pithau Bhaja.
